Post-Thanksgiving Leftovers. Aka. My favorite meals ever.
Truth be told, Thanksgiving is my favorite holiday. Its food based, focused on family and giving thanks (something many of us often forget to do), and its got great left overs.
First, and my favorite, is sweet potato biscuits the morning after. Sweet, moist, a festive orange and *amazing* with hot butter and honey....whats not to love?
Sweet Potato Biscuits
Take 3/4 cup mashed sweet potatoes (or yams)
Beat in:
1/4 cup melted butter
Mix in:
2/3 cup milk
Measure
1 1/4 cups all purpose flour OR equal parts all purpose and whole wheat flour*
Sift with**
1 tbs baking soda
1 tbs sugar
1 tspn salt
Stir sifted ingredients into wet mixture. dough tends to be very moist, but add more flour if it seems necessary. Turn onto floured board and pat dough out to 1/2 inch. Cut with floured biscuit cutter.
Cook on a greased pan at 450 for 15 minutes.
